- In a large skillet, heat olive oil over medium-high heat. Add sliced beef and brown it on all sides. Season with salt and pepper.
- Add chopped onions, minced garlic, and sliced mushrooms to the skillet. Sauté until the vegetables are soft.
- Pour in the beef broth and soy sauce; bring to a boil.
- Stir in the egg noodles and reduce heat to a simmer. Cook until noodles are tender, about 10 minutes.
- If you prefer a thicker gravy, mix cornstarch with a small amount of water to create a slurry, then stir into the beef and noodles. Cook for an additional 2-3 minutes until thickened.
- Serve the beef and noodles hot, garnished with chopped parsley if desired.
Notes
Make sure to slice the beef thinly so it cooks quickly. Stir the noodles while they cook to prevent them from sticking together. Adjust the seasoning to your taste; you can add more soy sauce for flavor. For variations, you can add more vegetables like carrots or peas, or switch to chicken instead of beef.
