Ingredients
  

Dry Ingredients
  • 2 cups unbleached all-purpose flour For gluten-free, use 1 1/2 cups gluten-free flour blend plus 1/2 cup almond flour.
  • 1/3 cup coconut sugar, pure cane sugar, maple syrup, or honey Plus more for fruit.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 3/4 cups almond milk Or any milk of your choice.
  • 1/4 cup avocado oil, vegetable oil, or melted coconut oil/butter Plus more for greasing the pan.
  • 1 teaspoon vanilla extract
Fruit Topping
  • 3-4 cups fresh or frozen fruit of your choice Berries work wonderfully; if using frozen, thaw slightly.

Method
 

Preparation
  1. Preheat your oven to 350ºF.
  2. Lightly grease a 9x13 baking pan and set it aside.
  3. Prepare your chosen fruit by mashing it slightly in a large bowl.
  4. In a separate mixing bowl, combine your dry ingredients.
  5. Mix your wet ingredients, then combine the two for a smooth batter.
Baking
  1. Pour your batter into the prepared pan and top it with the fruit.
  2. Bake for 40-50 minutes until the cobbler is set beautifully and the top is golden.
