  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) chopped green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth Use homemade for best taste.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
Optional Garnishes
  • 1 cup sour cream For serving, optional.
  • to taste chopped cilantro For serving, optional.

Method
 

Preparation
  1. In your crockpot, combine the chicken breasts, white beans, corn, green chiles, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir everything together until well mixed.
Cooking
  1. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked.
  2. Once cooked, remove the chicken, shred it with two forks, and return the shredded chicken to the pot.
  3. Serve hot, garnished with sour cream and cilantro if desired.

Notes
