Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, whisk together the cottage cheese and eggs until smooth and well combined.
  3. Stir in the shredded cheese, chopped vegetables, salt, and pepper until evenly distributed.
  4. Grease a muffin tin or use silicone molds, then pour the mixture into each cup, filling them about 3/4 full.
Cooking
  1. Bake in the preheated oven for 20-25 minutes until the bites are set and lightly golden on top.
  2. Once baked, allow them to cool slightly before carefully removing them from the molds.
Serving
  1. Serve warm on their own, or as part of a larger meal. Enjoy with salsa or a side of avocado.
