Preparation
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, whisk together the cottage cheese and eggs until smooth and well combined.
- Stir in the shredded cheese, chopped vegetables, salt, and pepper until evenly distributed.
- Grease a muffin tin or use silicone molds, then pour the mixture into each cup, filling them about 3/4 full.
Cooking
- Bake in the preheated oven for 20-25 minutes until the bites are set and lightly golden on top.
- Once baked, allow them to cool slightly before carefully removing them from the molds.
Serving
- Serve warm on their own, or as part of a larger meal. Enjoy with salsa or a side of avocado.
