Easy Chinese Beef Stir Fry

Ingredients
  

For the Beef
  • 7 oz 200 g beef rump steak or flank or any quick-cooking steak cut
  • 1/2 tsp baking soda for velveting the beef
For the Sauce
  • 2 tbsp soy sauce light, or all-purpose, not dark soy
  • 1 tbsp oyster sauce
  • 2 tbsp Chinese cooking wine or Mirin
  • 1 tsp white sugar
  • 1/2 tsp toasted sesame oil
  • a pinch white pepper or substitute with black pepper
For Thickening
  • 3 tsp cornstarch/corn flour
  • 1/2 cup water divided
For Cooking
  • 1 1/2 tbsp peanut oil
For Aromatics
  • 1 clove garlic finely minced
  • 1/2 small onion sliced
For Vegetables
  • 1/2 red bell pepper sliced
  • 1 small carrot sliced
  • 2 pcs bok choy prepared as indicated
  • 2 pcs green onions cut into 3 cm pieces, separating the white parts
To Serve
  • steamed white rice
  • optional sesame seeds

Method
 

Preparation
  1. In a bowl, mix the beef with baking soda and 1 tbsp of water, allowing it to sit for 15-20 minutes.
  2. In a separate bowl, whisk together soy sauce, oyster sauce, cooking wine, sugar, and sesame oil. Set aside.
  3. Rinse the beef under cold water, pat dry with paper towels, and toss it in a mix of cornstarch and a splash of water just enough to coat.
Cooking
  1. In a wok or large skillet, heat peanut oil over high heat.
  2. Add the beef in a single layer, cooking for about 1-2 minutes until browned. Remove and set aside.
  3. In the same pan, add garlic, onion, and all the vegetables except green onions. Stir-fry for about 3-4 minutes until tender-crisp.
  4. Return the beef to the pan, add the sauce and the remaining water. Stir to combine, cooking for another 1-2 minutes.
  5. Lastly, sprinkle in the green onion tops and serve hot over steamed rice. Optionally, garnish with sesame seeds.

Notes
