Ingredients
  

Main ingredients
  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional: Sour cream, shredded cheese, fresh chopped cilantro, salsa or guacamole

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced chicken and season with chili powder, paprika, cumin, garlic powder, salt, and pepper. Cook until chicken is no longer pink.
  3. Add sliced bell peppers and onion to the skillet, and sauté until vegetables are tender.
  4. Remove from heat and stir in lime juice.
  5. Serve with warm tortillas and your choice of toppings.

Notes

To store leftover fajitas, let them cool completely and place in an airtight container. They will last for about 3-4 days in the refrigerator. You can also freeze them for longer storage but it’s best within 2 months.
