  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • Tortillas, for serving
  • Optional: Sour cream, shredded cheese, fresh chopped cilantro, salsa, or guacamole

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced chicken and season with chili powder, paprika, cumin, garlic powder, salt, and pepper. Cook until the chicken is no longer pink.
  3. Add sliced bell peppers and onion to the skillet and sauté until vegetables are tender.
  4. Remove from heat and stir in lime juice.
Serving
  1. Serve with warm tortillas and your choice of toppings.
