  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • Tortillas, for serving
  • Optional: Sour cream, shredded cheese, fresh chopped cilantro, salsa, or guacamole

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the sliced chicken and season it with chili powder, paprika, cumin, garlic powder, salt, and pepper. Cook until the chicken is no longer pink.
  3. Add the sliced bell peppers and onion to the skillet. Sauté until the vegetables are tender.
  4. Remove from heat and stir in lime juice.
  5. Serve with warm tortillas and your choice of toppings.

Notes

Use fresh vegetables for the best flavor and color. You can add other veggies like mushrooms or zucchini for extra nutrition.
