Main Ingredients
  • 2 cups cooked, shredded chicken Rotisserie chicken works great!
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 4 cups low-sodium chicken broth
Dumpling Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 3 tbsp butter Melted
Seasonings
  • to taste fresh thyme
  • to taste garlic powder
  • to taste black pepper

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat and add the diced onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Stir in the shredded chicken, followed by the chicken broth. Bring the mixture to a gentle simmer.
  3. Add thyme, garlic powder, salt, and pepper to taste. Let everything simmer for another 5 minutes.
  4. In a bowl, mix flour, baking powder, and salt. Then stir in the milk and melted butter until a soft dough forms.
  5. Using a spoon, drop dollops of the dumpling dough into the simmering broth. Cover the pot and cook for another 15-20 minutes until the dumplings are cooked through and fluffy.
  6. Ladle into bowls and enjoy the warmth and coziness of this fantastic dish.
