Ingredients
  

For the Pie Dough
  • 2 1/2 cups all-purpose flour Can substitute with gluten-free flour.
  • 3/4 teaspoon salt
  • 1 cup unsalted butter (chilled and diced) Ensure butter is very cold for a flaky crust.
  • 3/4 cup ice water Plus more as needed.
For the Filling
  • 6 cups frozen wild blueberries Do not thaw them.
  • 7 tablespoons cornstarch
  • 1 cup granulated white sugar Can substitute with honey for a natural sweetener.
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1 large egg (lightly beaten with 1 tablespoon water for egg wash)

Method
 

Make and Chill the Pie Dough
  1. In a large bowl, combine flour and salt. Add chilled, diced butter and mix until the mixture resembles coarse crumbs.
  2. Gradually stir in ice water until the dough holds together.
  3. Divide into two discs, wrap in plastic, and chill for at least 1 hour.
Assemble the Pie Using Frozen Blueberries
  1. Preheat your oven to 425°F (220°C).
  2. Roll out one pie dough disc and fit it into your pie pan.
  3. In a separate bowl, combine frozen blueberries, cornstarch, sugar, lemon juice, and salt.
  4. Spoon the mixture into the prepared crust.
  5. Roll out the second disc and place it over the filling. Seal and cut slits in the top for steam to escape.
Bake the Pie
  1. Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
  2. Keep an eye on the edges; you might want to shield them with foil if they brown too quickly.
Cool and Serve
  1. Allow the pie to cool for a couple of hours before slicing. This helps the filling set up nicely.
  2. Serve it as is, or with whipped cream or ice cream for an extra indulgence.
