Ingredients

Main Ingredients

  • 3 cups cooked white rice (preferably day-old) Day-old rice works best for texture.
  • 4 strips bacon, chopped Crispy bacon adds flavor.
  • 2 units eggs, lightly beaten Scrambled eggs enhance the dish.
  • 1/2 cup green beans, chopped Can substitute with other vegetables.
  • 1/3 cup peas Fresh or frozen peas can be used.
  • 2 tbsp soy sauce Adjust to taste.
  • 1 tbsp oil (optional) Use if bacon doesn’t release enough fat.
  • to taste black pepper Add for seasoning.

Instructions

Cooking

  • In a large skillet or wok, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
  • In the same pan, scramble the eggs and remove them when just set.
  • Add the green beans and peas to the pan. Stir-fry for 2–3 minutes until they are tender.
  • Stir in the cooked rice and break up any clumps. Return the crispy bacon and scrambled eggs to the pan.
  • Pour in the soy sauce and toss everything until evenly coated. Add scallions and black pepper. Stir well and serve hot.

Notes

For best results, use day-old rice as it is less sticky. Feel free to customize the dish with extra vegetables or proteins like chicken or shrimp. For more flavor, consider adding garlic or ginger when stir-frying.
