- In a large skillet or wok, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
- In the same pan, scramble the eggs and remove them when just set.
- Add the green beans and peas to the pan. Stir-fry for 2–3 minutes until they are tender.
- Stir in the cooked rice and break up any clumps. Return the crispy bacon and scrambled eggs to the pan.
- Pour in the soy sauce and toss everything until evenly coated. Add scallions and black pepper. Stir well and serve hot.
