Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
- In a bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
- In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually mix in the dry ingredients and buttermilk alternately, starting and ending with dry ingredients.
- Fold in the chopped apples.
- Pour the batter into the prepared baking pan.
Crumb Topping
- For the crumb topping, mix together brown sugar, oats, 1/4 cup of flour, 1/2 teaspoon of cinnamon, and melted butter.
- Sprinkle the crumb mixture over the batter.
Baking
- Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.

Notes
Serve warm or at room temperature; can be paired with whipped cream or vanilla ice cream. Store in plastic wrap or foil for up to three days at room temperature or a week in the refrigerator. Freezing is also an option for up to three months.
