Ingredients
  

For the peach filling
  • 4 cups sliced fresh or canned peaches Fresh peaches elevate the flavor, but canned works too.
  • 1/2 cup granulated sugar For tossing with peaches.
For the batter
  • 1 cup granulated sugar Divided into 1/2 cup for peaches and 1/2 cup for the batter.
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk Can substitute with unsweetened almond milk for a dairy-free option.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon Optional, but highly recommended.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. If using fresh peaches, peel, pit, and slice them before tossing with 1/2 cup of granulated sugar. Set aside.
Batter Preparation
  1. In another bowl, whisk together the flour, baking powder, remaining sugar, and salt.
  2. Gradually pour in the milk and melted butter while stirring until the mixture is smooth.
Assembling and Baking
  1. Grease a 9×13-inch baking dish and pour the batter into it. Do not stir!
  2. Spoon the peach mixture over the top, allowing it to float on the batter.
  3. Bake for 30 to 35 minutes or until the top is golden brown and the filling is bubbly.
  4. Let it cool slightly before serving.
  5. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream!
