Ingredients
  

Main Ingredients
  • 1/2 pound lean ground beef
  • 1/2 pound rotini pasta Cook according to package instructions.
  • 2 Tbsp. taco seasoning
  • 1/2 cup yellow sweet pepper, chopped
  • 1/4 small white onion, diced
  • 1/2 pint grape tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 head iceberg lettuce, shredded
  • 1/2 cup French dressing Or a dairy-free dressing for a lighter version.
  • 1/4 cup sour cream For garnish.
  • 1 1/2 cups nacho cheese Doritos, crushed For topping.

Method
 

Preparation
  1. In a pan over medium-high heat, cook the lean ground beef until it’s browned. Drain all but 3 tablespoons of grease.
  2. Stir in taco seasoning and mix well, then set aside.
  3. Cook the rotini pasta according to the package instructions. Once done, drain and set aside.
  4. In a large bowl, combine the cooked beef, rotini, chopped sweet pepper, diced onion, halved grape tomatoes, shredded cheddar cheese, and shredded iceberg lettuce.
  5. Pour in the French dressing and mix everything gently until well combined.
  6. Garnish with sour cream and top with crushed nacho cheese Doritos.
  7. Serve and ENJOY!

Notes
