Ingredients
  

Main Ingredients
  • 1/2 pound lean ground beef Can substitute with ground turkey or a meat alternative.
  • 1/2 pound rotini pasta Cook according to package instructions.
  • 2 Tbsp. taco seasoning Adjust to taste.
  • 1/2 unit yellow sweet pepper, chopped
  • 1/4 small white onion, diced
  • 1/2 pint grape tomatoes Halved.
  • 1 cup shredded cheddar cheese
  • 1/2 head iceberg lettuce, shredded
  • 1/2 cup French dressing Can be substituted with other dressings like ranch or spicy chipotle.
  • 1/4 cup sour cream
  • 1 1/2 cup nacho cheese Doritos, crushed Add fresh before serving if storing leftovers.

Method
 

Cooking
  1. In a pan over medium-high heat, brown the lean ground beef until fully cooked. Drain all excess grease, leaving about 3 tablespoons in the pan.
  2. Add the taco seasoning to the beef and stir until well combined. Set aside to cool.
  3. Boil water in a separate pot and cook the rotini pasta according to package instructions. Once cooked, drain and set aside.
  4. In a large bowl, combine the cooked pasta, seasoned beef, chopped sweet pepper, diced onion, halved grape tomatoes, shredded cheddar cheese, iceberg lettuce, French dressing, and sour cream.
  5. Toss everything together until evenly mixed.
  6. Finish by garnishing with the crushed nacho cheese Doritos on top. Enjoy!

Notes
