Ingredients
  

Main Ingredients
  • 1/2 pound lean ground beef Can substitute with turkey or chicken.
  • 1/2 pound rotini pasta Use gluten-free rotini for a gluten-free option.
  • 2 Tbsp taco seasoning Add more for a spicier kick.
  • 1/2 cup yellow sweet pepper, chopped
  • 1/4 small white onion, diced
  • 1/2 pint grape tomatoes, halved
  • 1 cup shredded cheddar cheese Can substitute with pepper jack or queso fresco.
  • 1/2 head iceberg lettuce, shredded
  • 1/2 cup French dressing
  • 1/4 cup sour cream
  • 1 1/2 cups nacho cheese Doritos, crushed For a satisfying crunch.

Method
 

Preparation
  1. In a pan over medium-high heat, cook the ground beef until it's browned and cooked through. Drain all grease except for about 3 tablespoons.
  2. Add the taco seasoning to the beef and stir well to combine. Set it aside to cool a bit.
  3. In a separate pot, cook the rotini pasta according to the package instructions. Once cooked, drain the pasta and set it aside.
Combining Ingredients
  1. In a large bowl, combine the cooked beef, rotini, yellow sweet pepper, onion, grape tomatoes, shredded cheddar cheese, and the shredded iceberg lettuce.
  2. Pour in the French dressing and sour cream. Toss everything together until well combined.
  3. Finally, fold in the crushed Doritos for that satisfying crunch.
Serving
  1. Serve with a garnish of sour cream on top, and enjoy!

Notes
