Ingredients

Main Ingredients
  • 0.5 pound lean ground beef
  • 0.5 pound rotini pasta
  • 2 Tbsp. taco seasoning
  • 0.5 yellow sweet pepper (chopped)
  • 0.25 small white onion (diced)
  • 0.5 pint grape tomatoes
  • 1 cup shredded cheddar cheese
  • 0.5 head iceberg lettuce (shredded)
  • 0.5 cup French dressing
  • 0.25 cup sour cream
  • 1.5 cups nacho cheese Doritos (crushed) Add fresh before serving to maintain crunch

Method

Preparation
  1. In a pan over medium-high heat, cook the ground beef until browned. Drain the excess grease, leaving about 3 tablespoons in the pan.
  2. Sprinkle in the taco seasoning. Stir well to combine and allow it to cool slightly.
  3. Meanwhile, boil the rotini according to package instructions. Drain and set aside once cooked.
  4. In a large mixing bowl, add the cooked beef, rotini, chopped sweet pepper, diced onion, grape tomatoes, shredded cheese, shredded lettuce, French dressing, and sour cream.
  5. Gently toss all ingredients until well combined, and garnish with crushed Doritos for that sensational crunch.

Notes

For best results, chill the salad in the fridge for about 30 minutes before serving to enhance flavors. Store leftovers in an airtight container in the fridge for up to 3 days, but add fresh Doritos just before serving to keep them crisp.
