- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef or chicken until browned, draining any excess fat.
- Stir in the taco seasoning, Rotel, cream of chicken soup, and sour cream until thoroughly combined.
- In a baking dish, create a layer of slightly crushed Doritos at the bottom.
- Spread the meat mixture evenly over the Doritos and top with 1 cup of shredded cheddar cheese.
- Add another layer of crushed Doritos followed by the remaining cheese.
- Bake in the oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Once out of the oven, add any optional toppings before serving.
