Preparation
- Preheat the oven to 375 degrees Fahrenheit and spray a 9×13 baking dish with cooking spray.
- Heat a large skillet on medium-high heat and add the ground beef. Cook for 4-5 minutes, breaking up the meat with a spatula. Drain any extra fat, then add the diced onion and cook for another 3-4 minutes.
- Stir in the taco seasoning and cook for an additional minute.
- Add in the salsa, black beans, and corn, mixing until combined.
- Turn off the heat and mix in the sour cream until well blended.
Assembling
- Spread 1/3 of the Doritos into the bottom of the baking dish.
- Add 1/2 of the meat mixture followed by 1/3 of the cheese on top.
- Repeat with another 1/3 of the Doritos, the rest of the meat mixture, and another 1/3 of the cheese.
- Top with the last layer of Doritos and remaining cheese.
Baking
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for another 15 minutes or until the cheese is melted.
Serving
- Once done, remove from the oven and top with diced tomatoes, olives, and green onions.
- Serve with sour cream, salsa, and guacamole!

Notes
Make sure to drain the ground beef well to avoid a greasy casserole. For extra crunch, use extra Doritos on top. You can add more vegetables like bell peppers or swap black beans for pinto beans for a different flavor.
