Ingredients
  

Main Ingredients
  • 1 pound ground beef
  • 1/2 cup onion (diced)
  • 1 packet taco seasoning or 3 tablespoons of homemade seasoning
  • 1 1/2 cups thick salsa
  • 1 cup sour cream
  • 1 cup corn
  • 1/2 cup black beans
  • 2 cups shredded cheese cheddar or Mexican blend
  • 4 cups crushed Doritos (nacho cheese) for layering
  • 1/2 cup tomatoes (diced) for topping
  • 1/2 cup black olives (diced) for topping
  • 1/4 cup green onions (sliced) for topping

Method
 

Preparation
  1. Preheat the oven to 375 degrees Fahrenheit and spray a 9×13 baking dish with cooking spray.
  2. Heat a large skillet on medium-high heat and add the ground beef. Cook for 4-5 minutes, breaking up the meat with a spatula. Drain any extra fat, then add the diced onion and cook for another 3-4 minutes.
  3. Stir in the taco seasoning and cook for an additional minute.
  4. Add in the salsa, black beans, and corn, mixing until combined.
  5. Turn off the heat and mix in the sour cream until well blended.
Assembling
  1. Spread 1/3 of the Doritos into the bottom of the baking dish.
  2. Add 1/2 of the meat mixture followed by 1/3 of the cheese on top.
  3. Repeat with another 1/3 of the Doritos, the rest of the meat mixture, and another 1/3 of the cheese.
  4. Top with the last layer of Doritos and remaining cheese.
Baking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for another 15 minutes or until the cheese is melted.
Serving
  1. Once done, remove from the oven and top with diced tomatoes, olives, and green onions.
  2. Serve with sour cream, salsa, and guacamole!

Notes

Make sure to drain the ground beef well to avoid a greasy casserole. For extra crunch, use extra Doritos on top. You can add more vegetables like bell peppers or swap black beans for pinto beans for a different flavor.
