Preparation
- Preheat the oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
- Heat a large skillet on medium-high heat and add the ground beef. Cook for 4-5 minutes, breaking up the meat with a spatula or meat chopper. Drain any extra fat and add in the diced onion, cooking for another 3-4 minutes.
- Stir in the taco seasoning and cook for another minute.
- Add in the salsa, black beans, and corn, mixing until combined.
- Turn off the heat and mix in the sour cream until combined.
Assembly and Baking
- Spread 1/3 of the Doritos into the bottom of the baking dish, followed by 1/2 of the meat mixture and 1/3 of the cheese.
- Repeat the process with another 1/3 of the Doritos, the remaining meat mixture, and 1/3 of the cheese. Add the remaining chips on top along with the final layer of cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes or until the cheese is melted.
- Remove from the oven and top with diced tomatoes, olives, and green onions.

Notes
Serve warm with sour cream, salsa, and guacamole on the side. For spicier flavor, add jalapeños or hot sauce. You can make it vegetarian or swap proteins to adjust to your preference.
