Preparation
- Preheat your oven to 180°C (350°F). Grease or line your 8x8-inch square pan with parchment paper.
- In a large mixing bowl, combine the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt.
- In a separate bowl, whisk the melted butter, brown sugar, egg, and molasses until smooth.
- Gradually add warm water to the wet ingredients and mix well.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. If using, fold in the fresh grated ginger.
- Transfer the batter into the prepared pan and smooth the top.
Baking
- Bake in your preheated oven for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the ginger bread cool in the pan for about 10 minutes before transferring it to a wire rack.
- Optionally, serve warm or dust with powdered sugar before serving.

Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze wrapped tightly in plastic wrap and aluminum foil for up to 3 months. To reheat, warm a slice in the microwave for about 15-20 seconds.
