Ingredients

Main Ingredients
  • 1 cup Unsalted Butter, softened to room temperature Best for texture
  • 1 cup Granulated Sugar or low-calorie sweetener Use a low-calorie sweetener if preferred
  • 2 cups All-Purpose Flour Can substitute with gluten-free flour blend
  • 1 cup Maraschino Cherries, finely chopped and well-drained Drain well to avoid excess moisture
  • 0.5 cup Mini Chocolate Chips (optional) Dark or semi-sweet varieties work wonderfully

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Beat until the mixture is light and fluffy.
  3. Gradually add in the all-purpose flour, mixing until just combined.
  4. Gently fold in the finely chopped maraschino cherries and mini chocolate chips, if using.
  5. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space in between.
  6. Bake in the preheated oven for 12-15 minutes or until the edges are slightly golden.
  7. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure butter is at room temperature. If dough is too sticky, chill it for 30 minutes before shaping. Store cookies in an airtight container at room temperature for about a week. They can be frozen for up to three months.
