Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the softened butter and granulated sugar. Beat until the mixture is light and fluffy.
- Gradually add in the all-purpose flour, mixing until just combined.
- Gently fold in the finely chopped maraschino cherries and mini chocolate chips, if using.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space in between.
- Bake in the preheated oven for 12-15 minutes or until the edges are slightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
