Ingredients
  

Pasta and Cooking Essentials
  • 250 grams Pasta of your choice (spaghetti or fettuccine recommended) Any pasta shape can be used.
  • 1 tablespoon Salt For salting the pasta cooking water.
  • 1 dl Cooking water (reserved from the pasta) To help thicken the sauce.
Sauce Ingredients
  • 1 onion Onion, chopped For flavor base.
  • 200 grams Cherry tomatoes, halved You can use any tomatoes on hand.
  • 1/2 piece Paprika, diced For added flavor.
  • 1 teaspoon Oregano, fresh or dried To enhance flavor.
  • 2 teaspoons Tomato paste For depth of flavor.
  • 2 dl Heavy cream For the creamy sauce; can be substituted with non-dairy alternative.
  • 50 grams Parmesan cheese, grated Add more for extra flavor.
  • 1 bunch Fresh basil For topping.

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions; make sure to salt the water.
Preparing the Sauce
  1. In a large pan, sauté the chopped onion over medium heat until translucent, about 3-4 minutes.
  2. Add the halved cherry tomatoes and diced paprika; cook until soft and fragrant, roughly 5 minutes more.
  3. Stir in oregano, salt, and tomato paste, mixing until well combined.
  4. Pour in the heavy cream and reserved cooking water, stirring until blended. Simmer for a couple of minutes to thicken slightly.
Combining and Serving
  1. Toss in the cooked pasta, mixing everything together until the pasta is coated with the sauce.
  2. Serve hot, topped with grated parmesan cheese and a sprinkle of fresh basil.

Notes
