Cooking Pasta
- Cook the pasta according to package instructions; make sure to salt the water.
Preparing the Sauce
- In a large pan, sauté the chopped onion over medium heat until translucent, about 3-4 minutes.
- Add the halved cherry tomatoes and diced paprika; cook until soft and fragrant, roughly 5 minutes more.
- Stir in oregano, salt, and tomato paste, mixing until well combined.
- Pour in the heavy cream and reserved cooking water, stirring until blended. Simmer for a couple of minutes to thicken slightly.
Combining and Serving
- Toss in the cooked pasta, mixing everything together until the pasta is coated with the sauce.
- Serve hot, topped with grated parmesan cheese and a sprinkle of fresh basil.
