  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour Can substitute with almond flour for a gluten-free option.

Preparation
  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners for easy removal.
  2. In a mixing bowl, combine the mashed bananas, peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Whisk until smooth and well combined.
  3. Gradually fold in the oat flour. Mix until the batter is just combined; avoid over-mixing for the best texture.
  4. Spoon the batter into the prepared muffin tin, making sure each cup is filled about two-thirds full.
  5. Place in the oven and bake for 12 to 15 minutes, or until the tops are set and appear crackled.
  6. Allow the bites to cool in the tin for a few minutes before removing them.
