- Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners for easy removal.
- In a mixing bowl, combine the mashed bananas, peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Whisk until smooth and well combined.
- Gradually fold in the oat flour. Mix until the batter is just combined; avoid over-mixing for the best texture.
- Spoon the batter into the prepared muffin tin, making sure each cup is filled about two-thirds full.
- Place in the oven and bake for 12 to 15 minutes, or until the tops are set and appear crackled.
- Allow the bites to cool in the tin for a few minutes before removing them.
