Ingredients
  

Meat and Seasoning
  • 4 pieces cube steaks
  • 3 tablespoons flour for coating the steaks
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
Gravy Ingredients
  • 2 tablespoons cornstarch
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 cube beef bouillon or 1 tsp better than bouillon
  • 1 teaspoon Worcestershire sauce
Cooking Butter and Onions
  • 3 tablespoons cold unsalted butter separated for cooking
  • 1 large yellow onion sliced into 1/2 inch strings
Oil for Cooking
  • 2 tablespoons olive oil for searing the steaks

Method
 

Preparation
  1. Combine the meat seasoning mix in a bowl and set aside.
  2. In another bowl, whisk cornstarch with the chicken and beef broth until smooth. Add the beef bouillon cube, onion powder, garlic powder, and Worcestershire sauce, mixing well. Set this aside for later.
  3. Pound each cube steak to tenderize, then rub with the seasoning mix and flour.
Cooking the Steaks
  1. Heat olive oil in a skillet over medium-high heat and sear the steaks for about 3 minutes on each side. Set aside to rest after cooking.
Preparing the Gravy
  1. In the same skillet, melt the cold butter, then add the onions, cooking until they turn soft and translucent.
  2. Pour in the prepared gravy mixture and bring it to a boil, then reduce the heat to a simmer.
  3. Return the steaks to the skillet, allowing them to simmer with the gravy until it's thickened to your liking.
  4. Optionally, add a touch more cold butter at the end for an ultra-smooth finish.
Serving
  1. Serve your cube steak with mashed potatoes, biscuits, or your choice of vegetables for a complete meal.
