  • 1 cup fresh spinach, chopped If using frozen, be sure it's thawed and well-drained
  • 1 small onion, chopped Finely chop for consistent cooking
  • 1 cup feta cheese, crumbled Feel free to add more for flavor
  • 1 cup milk
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil For sautéing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until it’s soft and translucent, about 5 minutes.
  4. Stir in the fresh spinach and cook until it wilts, approximately 2–3 minutes. Remove from heat and set aside.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  6. Fold the sautéed vegetables and feta cheese into the egg mixture.
  7. Pour everything into a greased pie dish or baking dish.
  8. Bake for 30–35 minutes or until the center is set and lightly golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes
