Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it’s soft and translucent, about 5 minutes.
- Stir in the fresh spinach and cook until it wilts, approximately 2–3 minutes. Remove from heat and set aside.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
- Fold the sautéed vegetables and feta cheese into the egg mixture.
- Pour everything into a greased pie dish or baking dish.
- Bake for 30–35 minutes or until the center is set and lightly golden.
- Let it cool for a few minutes before slicing and serving.
