  • 4 large eggs
  • 1 cup milk Consider using half-and-half for creamier texture.

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until it’s translucent.
  3. Add the chopped spinach to the skillet and cook until just wilted, stirring occasionally.
  4. In a separate bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg until well combined.
  5. Stir in the sautéed onion and wilted spinach mixture, followed by folding in the crumbled feta cheese gently.
  6. Pour this delightful mixture into a greased pie dish, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 30-35 minutes, or until the center is set and the top is lightly golden.
