Ingredients
  

Pastry and Topping
  • 1 sheet 1 sheet puff pastry (250 g), thawed Ensure the puff pastry is fully thawed before using.
  • 1 whole 1 whole burrata (approx. 125–150 g)
  • 2 ripe 2 ripe peaches, sliced into wedges Nectarines can be used instead.
  • 1 tbsp 1 tbsp olive oil For grilling the peaches.
  • Pinch Pinch of salt To taste.
  • 40 g 40 g roasted pistachios, roughly chopped
  • 1–2 tbsp 1–2 tbsp balsamic glaze Flavored balsamic glaze can be used for variation.
  • Fresh basil or thyme (optional) Fresh herbs enhance aroma.
Decoration
  • 1 egg 1 egg, beaten (for egg wash)
  • 1 tbsp 1 tbsp sesame seeds or poppy seeds (optional, for decoration)

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. On the tray, shape the thawed puff pastry into a rough circle, cutting a smaller circle from the center to form a wreath shape.
  3. Fold and crimp the outer edges slightly to create a decorative edge.
  4. Brush the pastry all over with the beaten egg, and sprinkle sesame or poppy seeds on top if you like.
Baking
  1. Bake in the oven for 20–25 minutes, or until the pastry is puffed up and golden brown.
  2. Allow it to cool slightly after baking.
Grilling Peaches
  1. While the pastry cools, heat a grill pan over medium-high heat and add the olive oil.
  2. Grill the peach wedges for about 2–3 minutes on each side until they are slightly charred.
Assembly
  1. Place the burrata in the center of the cooled puff pastry wreath.
  2. Arrange the grilled peaches artistically over the pastry.
  3. Scatter the chopped pistachios on top of the peaches, and drizzle generously with balsamic glaze.
  4. Serve immediately by cutting the wreath like a crown.

Notes
