Ingredients
  

For the Wreath
  • 1 sheet puff pastry (250 g), thawed Make sure fully thawed before using.
  • 1 whole burrata (approx. 125–150 g) Creamy cheese for the center.
  • 1 egg beaten (for egg wash) Helps to achieve a golden brown finish.
  • 1 tbsp sesame seeds or poppy seeds (optional) For decoration.
For the Filling
  • 2 ripe peaches, sliced into wedges Can substitute with nectarines.
  • 1 tsp olive oil For grilling the peaches.
  • Pinch salt To season the peaches.
  • 40 g roasted pistachios, roughly chopped Adds crunch.
  • 1–2 tbsp balsamic glaze For drizzling on top.
  • Fresh basil or thyme (optional) Enhances aroma and freshness.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. On the tray, shape the thawed puff pastry into a rough circle, cutting a smaller circle from the center to form a wreath shape.
  3. Fold and crimp the outer edges slightly to create a decorative edge.
  4. Brush the pastry all over with the beaten egg, and sprinkle sesame or poppy seeds on top if you like.
Baking
  1. Bake in the oven for 20–25 minutes, or until the pastry is puffed up and golden brown.
  2. Allow it to cool slightly after baking.
Grilling Peaches
  1. While the pastry cools, heat a grill pan over medium-high heat and add the olive oil.
  2. Grill the peach wedges for about 2–3 minutes on each side until they’re slightly charred.
Assembly
  1. Place the burrata in the center of the cooled puff pastry wreath.
  2. Arrange the grilled peaches artistically over the pastry.
  3. Scatter the chopped pistachios on top of the peaches, and drizzle generously with balsamic glaze.
  4. Serve immediately. Cut the wreath like a crown and enjoy scooping up the delicious combinations of flavors.

Notes
