Ingredients
  

Main Ingredients
  • 2 pieces chicken breasts
  • 1 can white beans (such as cannellini)
  • 1 can diced tomatoes
  • 1 can corn
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese
  • 1 cup chicken broth
  • to taste none salt and pepper
Optional Toppings
  • to taste none shredded cheese
  • to taste none cilantro
  • to taste none avocado

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add in the white beans, diced tomatoes, corn, diced onion, minced garlic, and ranch seasoning mix.
  3. Pour the chicken broth over everything and give it a good stir.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
Finishing
  1. Remove the chicken, shred it, and return it to the pot.
  2. Stir in the cream cheese until it is fully melted and mixed in.
  3. Season with salt and pepper to taste.
  4. Serve hot with your choice of toppings.
