  • 1 package refrigerated tortellini Use whole wheat for a healthier option.
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream Add after reheating if freezing.
  • 1 can diced tomatoes (14 oz)
  • 1 cup spinach (fresh or frozen) Adds freshness.
  • 1 medium onion, diced
  • 2 cloves garlic, minced For enhanced flavor.
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. In your slow cooker, combine the diced onion, minced garlic, diced tomatoes, and broth.
  2. Sprinkle in the Italian seasoning and mix well.
  3. Set your slow cooker on low and cook for 4-6 hours, or choose the high setting for 2-3 hours.
  4. About 30 minutes before you’re ready to serve, add the tortellini and spinach.
  5. Just before serving, stir in the heavy cream, and season with salt and pepper to taste.
