Preparation
- In your slow cooker, combine the diced onion, minced garlic, diced tomatoes, and broth.
- Sprinkle in the Italian seasoning and mix well.
- Set your slow cooker on low and cook for 4-6 hours, or choose the high setting for 2-3 hours.
- About 30 minutes before you’re ready to serve, add the tortellini and spinach.
- Just before serving, stir in the heavy cream, and season with salt and pepper to taste.
