  • 1.5 pounds boneless, skinless chicken thighs or breasts Thighs tend to be juicier, but breasts are also an option.
  • 1 cup teriyaki sauce Use a good-quality sauce for better flavor.
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • to taste Salt and pepper
  • Cooked rice or noodles for serving Serving suggestion.
  • Optional toppings: sliced green onions, sesame seeds, sliced bell peppers Add for extra flavor and color.

Instructions
 

Preparation

  • Place the chicken in the crockpot.
  • Add teriyaki sauce, garlic, ginger, salt, and pepper to the crockpot and stir to combine.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  • Once cooked, shred the chicken using two forks and stir to combine with the sauce.
  • Serve over cooked rice or noodles and top with green onions and sesame seeds if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to three months. Thaw in the refrigerator before reheating. Feel free to add vegetables to make it a complete meal.
