  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 15 oz canned diced tomatoes, with juices
  • 15 oz canned black beans, drained and rinsed
  • 8 oz pasta (like rotini or elbow)
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or Mexican blend)

  • to taste Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • In a crockpot, brown the ground beef with diced onion and minced garlic until fully cooked. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes, black beans, pasta, and beef broth.
  • Cover and cook on low for 4-5 hours or until pasta is tender.
  • Stir in cheese until melted.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes

For serving, top with additional ingredients such as sour cream, avocado, or lime juice. It pairs well with tortilla chips or a fresh green salad.
