  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning Homemade taco seasoning can be used for added flavor.
  • 2 cups shredded cheese Consider using cheese options like pepper jack or cheddar.
  • Tortilla chips or tortillas Use for layering.

  • sour cream For serving.
  • green onions For serving.

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat until it's no longer pink. Drain any excess fat.
  2. In a large crockpot, combine the browned beef, black beans, corn, diced tomatoes, and taco seasoning. Stir well.
  3. Layer tortilla chips or tortillas on top of the mixture, then sprinkle shredded cheese generously on top.
Cooking
  1. Cover the slow cooker and let it cook on low for about 4-6 hours, or on high for 2-3 hours, until bubbly.
Serving
  1. Serve hot, optionally topping with sour cream and sliced green onions.
