Preparation
- Brown the ground beef in a skillet over medium heat until it's no longer pink. Drain any excess fat.
- In a large crockpot, combine the browned beef, black beans, corn, diced tomatoes, and taco seasoning. Stir well.
- Layer tortilla chips or tortillas on top of the mixture, then sprinkle shredded cheese generously on top.
Cooking
- Cover the slow cooker and let it cook on low for about 4-6 hours, or on high for 2-3 hours, until bubbly.
Serving
- Serve hot, optionally topping with sour cream and sliced green onions.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
