  • 2 pounds boneless skinless chicken breasts (or thighs)
  • 24 ounces tiny red potatoes (or Yukon Gold) No peeling necessary, just wash.
  • 16 ounces baby carrots No peeling necessary.
  • 21.5 ounces cream of chicken soup (2-10.5 ounce cans)
  • 1/2 cup chicken stock
  • 4 ounces chopped chiles Optional but adds flavor.
  • 1 ounce Ranch seasoning mix

  1. Season the chicken: Sprinkle salt, pepper, and 1 tablespoon of the Ranch dressing mix on the chicken for an added flavor boost.
  2. Layer the veggies: Add the washed baby potatoes and carrots to your slow cooker—no need to peel anything!
  3. Top with chicken: Place the seasoned chicken on top of the vegetables.
  4. Blend the sauce: In a mixing bowl, combine the cream of chicken soup, chicken stock, chopped chiles, and the remaining Ranch seasoning mix until well-blended.
  5. Pour it all: Pour the creamy mixture over the chicken and veggies.
  6. Cook it: Set your Crockpot on low for 8 hours or high for 4 hours, allowing the flavors to meld beautifully.
  7. Serve it up: Once done, shred the chicken or simply break it into chunks with a fork before serving.

Notes

For extra flavor, marinate the chicken in the Ranch seasoning for an hour before cooking. Skip the chiles if you prefer a milder flavor, but they really do add a nice kick! Add some greens like spinach or kale during the last hour of cooking for added nutrients and color.
