  • 4 1/2 - 5 lbs peeled, diced peaches Use ripe peaches for the best flavor.
  • 1/2 cup water To help with cooking the peaches.
  • 1/4 - 1/2 cup brown sugar Optional, adjust based on sweetness preference.
  • 1-2 tsp vanilla Optional, for extra flavor.
  • Reserved peach juice from cutting the peaches To enhance flavor.

Preparation
  1. Begin by peeling and dicing the peaches.
  2. Place the diced peaches into the crockpot along with the water and any reserved peach juice.
Cooking
  1. Set your crockpot to high and let it cook for 8 hours.
  2. About 1-2 hours in, remove the lid and mash the peaches gently as they cook, while ensuring proper ventilation by placing the lid on sideways.
  3. As the cooking time progresses, the peaches will reduce, concentrating the flavors.
  4. Once there are just a few big chunks remaining, use an immersion blender to create a smoother texture.
  5. Taste your peach butter. If it isn’t sweet enough, add sugar gradually and also add the vanilla for flavor.
  6. Once the butter is thickened and caramelized in color, let it cool before placing it in airtight containers.
