  • 1 pound ground beef or Italian sausage You can substitute with ground turkey or plant-based meat.
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes One can.
  • 6 cups chicken or vegetable broth
  • 2 cups uncooked pasta (ziti or fusilli)
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper
  • 8 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish Optional.

Method
 

Preparation
  1. In a skillet, brown the ground beef or Italian sausage along with the chopped onion and minced garlic. Drain off any excess fat.
  2. In your crockpot, combine the meat mixture with the crushed tomatoes, broth, uncooked pasta, Italian seasoning, salt, and pepper.
  3. Cook the mixture on low for 6-8 hours or high for 3-4 hours until the pasta is tender.
  4. About 15 minutes before serving, stir in the ricotta, mozzarella, and Parmesan cheeses.
  5. Garnish with fresh basil before serving. Enjoy the hearty goodness of this lasagna soup!
