  • to taste Salt and pepper
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • to garnish Fresh parsley For garnish.

Preparation
  1. Place the diced potatoes at the bottom of your crockpot.
  2. In a separate bowl, mix the olive oil, minced garlic, Italian seasoning, and season with salt and pepper.
  3. Coat the chicken breasts thoroughly in this flavorful mix before placing them atop the potatoes.
  4. Pour the chicken broth over the entire meal, and then sprinkle the grated Parmesan cheese evenly on top.
  5. Cover and cook on low for 6-7 hours, or until the chicken is thoroughly cooked and tender.
  6. Before serving, garnish with fresh parsley to add a pop of color.
