Ingredients
  

For the Filling
  • 3 pounds beef chuck roast Ideal for tenderness
  • 1 medium onion, sliced Yellow or sweet onions work great
  • 3 cloves garlic, minced
  • 4 cups beef broth (homemade or store-bought)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
For Serving
  • 6 pieces hoagie rolls
  • 6 slices provolone cheese Can substitute with mozzarella or Swiss
  • to taste fresh parsley, optional For garnish

Method
 

Preparation
  1. Place the beef roast in the slow cooker.
  2. Scatter the sliced onion and minced garlic on top.
  3. In a bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the roast.
Cooking
  1. Cover and cook on low for 8-10 hours, until the beef is tender and shreds easily.
  2. Once cooked, shred the beef with two forks and mix it back into the flavorful broth.
Assembly
  1. Preheat your oven broiler.
  2. Split the hoagie rolls and arrange them on a baking sheet.
  3. Fill each roll with a generous portion of the shredded beef and top it with a slice of provolone cheese.
  4. Broil for 2-3 minutes until the cheese is melted and bubbling.
Serving
  1. Serve hot, accompanied by warm au jus from the slow cooker for dipping.
