Ingredients
  

Main ingredients
  • 2 pounds beef chuck roast A tender cut ideal for slow cooking.
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon soy sauce Can use gluten-free if needed.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 4 pieces hoagie rolls For sandwich assembly.
  • 4 slices provolone cheese Can substitute with mozzarella or cheddar.
Optional accompaniments
  • to taste crispy fries or salad for serving Serve on the side.

Method
 

Preparation
  1. Place the beef chuck roast in the crockpot and generously season it with salt and pepper.
  2. Layer sliced onions and minced garlic over the roast.
  3. In a bowl, mix together the beef broth, soy sauce, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the beef in the crockpot.
Cooking
  1. Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender and easily shreddable.
  2. When ready, shred the beef using two forks right in the crockpot so it absorbs all the delicious juices.
Assembly
  1. Preheat your oven to 375°F (190°C).
  2. Slice the hoagie rolls and load them with a generous portion of shredded beef, then top with a slice of provolone cheese.
  3. Arrange the sandwiches on a baking sheet and bake for 5-7 minutes, just until the cheese melts.
  4. Serve hot with a bowl of warm au jus for dipping.

Notes
