For the beef and broth
  • 3-4 lbs beef chuck roast Choose a good quality piece for best results.
  • 1 large onion, thinly sliced
  • 3 cups beef broth Using high-quality broth enhances flavor.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
For the assembly
  • 4-6 pieces hoagie rolls Toasted for best texture.
  • 6 slices provolone cheese Can substitute other cheeses if preferred.

Preparation
  1. Season the beef chuck roast with salt, pepper, garlic powder, onion powder, and dried thyme.
  2. Sear the beef in a hot skillet to add a crust and enhance flavors.
Cooking
  1. Lay the sliced onions at the bottom of the slow cooker.
  2. Place the seasoned beef on top, then pour in the beef broth, Worcestershire sauce, and soy sauce.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender and shreds easily.
  4. Remove the beef, shred it using two forks, and return to the juices.
Assembly
  1. Toast the hoagie rolls under the broiler or in a dry skillet until golden brown.
  2. Pile the shredded beef onto each hoagie roll, top with a slice of provolone cheese, and broil for 1-2 minutes until the cheese is bubbly.
  3. Strain the cooking liquid, discard the onions, and serve in small bowls for dipping.
