  • 1 packet dry ranch dressing or swap for taco seasoning
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 can (10 oz) Rotel diced tomatoes and green chilies do not drain
  • 1 can (15 oz) whole kernel corn drained
  • 1 can (15 oz) black beans drained and rinsed
  • 1 block (8 oz) plain cream cheese or Greek yogurt for a lighter option
  • 2 pieces fresh limes juiced
  • ½ cup chicken broth

Method
 

Preparation
  1. Start by placing the chicken breasts into your Crock Pot.
  2. Next, add the drained and rinsed black beans, drained corn, and undrained Rotel tomatoes.
  3. Sprinkle the onion powder, ranch seasoning, and black pepper on top.
  4. Squeeze the juice from fresh limes directly over the contents of the pot.
  5. Pour chicken broth over everything, ensuring moisture spreads evenly.
  6. Lastly, place the block of cream cheese on top.
Cooking
  1. Secure the lid and set on HIGH for 3-4 hours or LOW for 5-6 hours.
  2. The chicken is cooked to perfection when it reaches an internal temperature of 165°F.
  3. Once done, shred the chicken with two forks and stir it back into the creamy mix.
