Preparation
- Start by placing the chicken breasts into your Crock Pot.
- Next, add the drained and rinsed black beans, drained corn, and undrained Rotel tomatoes.
- Sprinkle the onion powder, ranch seasoning, and black pepper on top.
- Squeeze the juice from fresh limes directly over the contents of the pot.
- Pour chicken broth over everything, ensuring moisture spreads evenly.
- Lastly, place the block of cream cheese on top.
Cooking
- Secure the lid and set on HIGH for 3-4 hours or LOW for 5-6 hours.
- The chicken is cooked to perfection when it reaches an internal temperature of 165°F.
- Once done, shred the chicken with two forks and stir it back into the creamy mix.
Serving
- Serve hot and enjoy the delightful meal.
Notes
Crock Pot Fiesta Chicken is delicious on its own, but can be served over fluffy rice, in soft tortillas for tacos, or on a bed of nachos. Top with fresh cilantro, diced avocado, or a sprinkle of cheese for added flavor.
