Ingredients

Main Ingredients
  • 2 pieces Boneless, Skinless Chicken Breasts or Thighs You can substitute with rotisserie chicken for quicker prep.
  • 2 cans Cream of Chicken Soup This adds creaminess and depth. You might try cream of mushroom for an alternative flavor.
  • 1 can Cream of Celery Soup This enhances the savory profile; it can also be replaced with any cream-based soup.
  • 12 oz Frozen Mixed Vegetables These offer flavor and nutrition. Fresh veggies like carrots or peas work beautifully too.
  • 2 teaspoons Garlic Powder For a bolder taste, consider using fresh garlic.
  • 2 teaspoons Onion Powder Fresh onions can be sautéed for extra richness.
  • 2 teaspoons Black Pepper Adjust to your spice preference.
  • 16.3 oz Homestyle Biscuits These can be substituted with puff pastry for a different texture.

Method

Preparation
  1. If you’re not using rotisserie chicken, chop the raw chicken into bite-sized pieces.
  2. Layer the chicken at the bottom of the Crock Pot, followed by both cream soups, mixed vegetables, garlic powder, onion powder, and black pepper. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for about 4 hours, until the chicken is cooked through and tender.
  2. About 30 minutes before serving, take the lid off and place the biscuits on top of the chicken mixture. Cover and continue cooking until the biscuits are golden brown.
Serving
  1. Once everything is cooked, scoop generous portions into bowls and dig in!

Notes

For best results, consider using a liner for easy cleanup. You can also prep ahead by chopping your veggies and chicken the night before. Add herbs for extra flavor or create variations like a dairy-free version or a cheesy delight.
