  • 1 pound thick-cut bacon Thick-cut bacon holds up better to the baking process.
  • 0.5 cup packed brown sugar
  • 2 tablespoons pure maple syrup Can substitute with honey or agave syrup.
  • 1 tablespoon hot sauce (such as Sriracha) Can swap for smoked chipotle sauce for a smoky kick.
  • 1 teaspoon cracked black pepper
  • 0.5 teaspoon cayenne pepper Adjust for heat preference.
  • 0.25 teaspoon cinnamon
  • 0.5 cup chopped pecans or walnuts (optional) Add if desired.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Place a wire rack on top of the lined baking sheet.
  3. Lay the bacon slices in a single layer on the wire rack.
  4. In a medium bowl, whisk together the brown sugar, maple syrup, hot sauce, cracked black pepper, cayenne pepper, and cinnamon until smooth.
  5. With a pastry brush, coat both sides of each bacon slice with the sugar and spice mixture.
  6. If desired, sprinkle chopped pecans or walnuts over the bacon.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, keeping an eye on it to prevent burning.
  2. Once caramelized and crispy, remove from oven and allow to cool on the rack for about 5 minutes.
Serving
  1. Transfer bacon to a serving platter and enjoy warm or at room temperature.
