Ingredients
  

For the Cauliflower
  • 1 large head cauliflower, cut into even florets Opt for a firm cauliflower head with tight florets.
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
For the Creamy Herb Sauce
  • 1 cup Greek yogurt For a vegan option, substitute with cashew cream or silken tofu.
  • 2 tablespoons fresh herbs, finely chopped (parsley and dill suggested) Feel free to use any fresh herbs you love.
  • 1 tablespoon lemon juice, freshly squeezed Can substitute with lime juice for a twist.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the cauliflower florets and make sure they’re dry.
  3. In a large bowl, toss the florets with olive oil, garlic powder, salt, and pepper until well-coated.
Cooking
  1. Spread the cauliflower evenly on a baking sheet and roast for 25-30 minutes. Flip them halfway to ensure they’re golden and crisp.
  2. While the cauliflower is roasting, combine Greek yogurt, chopped herbs, lemon juice, and additional salt and pepper in a separate bowl to create your creamy herb sauce.
  3. Once the cauliflower is done, serve warm alongside the herb sauce for dipping!
