Preparation
  1. Preheat the oven to 425°F and place a metal sheet pan inside to heat.
  2. Scrub the sweet potatoes and cut them into uniform sticks (about 1/3 inch thick).
  3. In a bowl, toss the cut sweet potatoes with olive oil until they have a light gloss.
  4. In a separate small bowl, mix cornstarch with salt, pepper, and paprika.
  5. Sprinkle the cornstarch mixture over the oiled sweet potatoes and toss until evenly coated.
Baking
  1. Spread the sweet potatoes in a single layer on the preheated sheet pan with space between them to prevent steaming.
  2. Bake in the lower middle rack for 15 minutes, then flip the fries and bake for an additional 10 to 15 minutes or until golden brown.
  3. Remove from the oven and let the fries rest for a few minutes on the pan before serving.
