  • 2 large eggs (beaten)

  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1/4 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley For garnish

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  3. In a shallow bowl, combine the flour, salt, black pepper, oregano, and garlic powder.
  4. In another bowl, beat the eggs until smooth.
  5. In a third bowl, mix the breadcrumbs with the Parmesan cheese.
  6. Dredge each chicken breast in the flour mixture, shaking off any excess.
  7. Dip the floured chicken breast into the beaten eggs, allowing excess to drip off.
  8. Press the chicken into the breadcrumb mixture, ensuring an even coating on both sides.
Cooking
  1. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  2. Cook the chicken breasts until golden brown on each side, about 3-4 minutes per side.
  3. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  4. While the chicken is baking, prepare the garlic butter sauce. In a small saucepan, melt the butter over medium heat.
  5. Add the minced garlic and sauté for about 1 minute, until fragrant.
  6. Stir in the chicken broth and lemon juice, bringing the mixture to a simmer.
  7. Simmer for 3-4 minutes, allowing the sauce to slightly thicken.
  8. Remove the skillet from the oven and transfer the chicken to a serving platter.
  9. Pour the garlic butter sauce over the crispy chicken and garnish with fresh parsley.
  10. Serve hot and enjoy!
