Preparation
- Preheat your oven to 400°F (200°C) to get things ready while you prepare the chicken.
- In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Dredge each chicken breast into the mixture until fully coated.
Cooking
- Heat olive oil in a large oven-proof skillet over medium-high heat. Once hot, add chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Remove chicken from the skillet. Add the sliced mushrooms and sauté until they’re tender. Pour in the heavy cream, mix in the Parmesan cheese and thyme, stirring well until everything is combined.
- Return the chicken to the skillet, spooning some of the sauce over the top. Place the skillet in the oven for an additional 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Once out of the oven, allow the chicken to rest for a few minutes before serving it with the creamy mushroom sauce generously drizzled over.

Notes
To keep leftovers, store in an airtight container in the refrigerator for up to 3 days. Can also be frozen for up to 2 months; thaw overnight in the fridge before reheating. For extra crispiness, let the breaded chicken sit for a few minutes before frying.
