Ingredients
  

For the Potatoes
  • 2 pounds small potatoes Opt for small, waxy potatoes like Yukon Gold.
  • 1 stick salted butter Melted in the baking pan.
  • 2 tbsp olive oil Drizzled over potatoes.
For the Seasoning
  • ½ cup freshly grated Parmesan cheese Can be substituted with your favorite cheese.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp parsley Can be adjusted to taste.
  • ½ tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking pan, melt 1 stick of salted butter.
  3. Halve the small potatoes and score the cut side in an X pattern.
  4. In a bowl, mix together the Parmesan cheese, garlic powder, onion powder, parsley, salt, and black pepper.
  5. Sprinkle the majority of your seasoning mixture over the melted butter evenly.
  6. Place the potatoes cut side down into the pan, right on top of the seasoning.
  7. Drizzle 2 tablespoons of olive oil over the top of the potatoes and sprinkle with the reserved seasoning.
Baking
  1. Bake uncovered for about 40 minutes, or until the potatoes are tender and superbly crispy.
  2. Dig in and enjoy your delicious creation!
