  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 serving cooked pasta for serving (optional) Feel free to swap in gluten-free breadcrumbs or dairy-free cheese.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Create a breading station with three shallow dishes: In the first dish, add the all-purpose flour. In the second dish, beat the eggs with a pinch of salt. In the third dish, combine breadcrumbs with grated Parmesan cheese, garlic powder, and onion powder.
  4. Dredge each chicken breast first in the flour, shaking off any excess, then dip into the beaten eggs. Finally, coat thoroughly in the breadcrumb mixture.
Cooking
  1. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook until golden brown, about 3 minutes per side.
  2. Spoon the marinara sauce evenly over the chicken. Sprinkle mozzarella cheese on top.
  3. Transfer the skillet to the preheated oven and bake until the chicken is cooked through and the cheese is bubbly and golden brown, about 15-20 minutes.
  4. Remove from the oven and let it rest for a few minutes. Top with fresh basil leaves before serving.
  5. Serve alongside cooked pasta if desired for a complete meal.
